Corn, rice and beans, are the domestic staple of America’s Old South. Hominy is the result of soaking and hulling dried com; when this is dried and ground, it becomes grits. Ground corn or corn meal is the basis of many fine dishes from dog bread (a crisp drop scone), through the deep-fried hush puppies, to the elegant spoon breads that are more like a soufflé.
