Tripe soup is a night-time soup, eaten very late or very early in the morning after being out all night. It is supposed to perk you up after a night of excess. In Istanbul, establishments specialising in tripe dishes (işkembeci) are open around the clock and are found in neighbourhoods that have a vibrant nightlife.

  • 400 g (14 oz) pre-cooked veal or sheep’s tripe, cut into small squares (see note)

Bring 1 litre (35 fl oz/4 cups) salted water to the boil in a large saucepan. Add the tripe and simmer, covered
