This is a deliciously simple, wonderful dish from Puglia, in which sardines are layered and baked, coated with a savoury custard.

Ingredients

  • lb (800 g) fresh or frozen sardines, scaled, gutted, washed and patted dry
  • 6 tablespoons

Method

Pre-heat the oven to gas mark 4, 350°F (180°C).

Prepare the fish with care, open them out flat and remove the heads and the central bones. Put the salted water in the bottom of an ovenproof dish large enough to take all the fish in 2 layers and put 1 layer of fish on the bottom
