Supreming is a technique used on citrus to remove the membrane and pith, so that only the sweetest, juiciest part of the fruit is reserved. If you like, try it with this recipe instead of cutting the oranges into rounds.

Method

  • Cut off the ends of the fruit: Using a chef’s knife, cut a thin slice from the top and bottom of the fruit to expose the flesh.
  • Cut away the peel and pith: Stand the fruit on a cutting board on a flat end. Following the curve of the fruit, cut away all the peel and white pith. Continue in this fashion, working your way around the fruit.
