Spaghetti Alla Chitarra with Lamb & Sweet Peppers

Lamb appears frequently in the cuisine of Abruzzo, where shepherds still practice the thousand-year-old tradition of transumanza, the seasonal movement of flocks of sheep from lowlands to mountains and back again. Spaghetti alla chitarra are long noodles that are shaped by pressing a sheet of pasta against a frame fitted with metal strings that resemble the strings of a guitar (chitarra).
