This is my favourite dish – it’s super fast and easy to make, with an amazing flavour. It might sound odd, but the Japanese love the combined flavour of butter and soy sauce – it’s very more-ish.

Ingredients

  • 16 large shiitake mushrooms, stalks removed
  • 60 g ( oz) butter, softened

Method

Preheat the grill to medium–high.

Make a cross-shaped incision in the centre of the gills of each mushroom – this will help them absorb the butter and soy sauce.
