This is my favourite dish – it’s super fast and easy to make, with an amazing flavour. It might sound odd, but the Japanese love the combined flavour of butter and soy sauce – it’s very more-ish.



  • 16 large shiitake mushrooms, stalks removed
  • 60 g ( oz) butter, softened
  • 4 garlic cloves, thinly sliced
  • ½ lemon


  • 3 tablespoons soy sauce


Preheat the grill to medium–high.

Make a cross-shaped incision in the centre of the gills of each mushroom – this will help them absorb the butter and soy sauce.

Place the mushrooms on a shallow baking tray, gill side up. Smear the butter on the gills and stems, then put 2–3 slices of garlic on top of each mushroom.

Set the tray under the hot grill and cook for 5–7 minutes, until the butter has melted, the garlic has turned golden brown and the mushrooms have softened slightly.

Transfer the mushrooms to a plate, drizzle with the soy sauce and squeeze the lemon over them before serving.
