This is a Japanese-style carbonara. In the Kagawa Prefecture, which is famous for udon noodles, there is a noodle shop on every corner, and this dish is served as a snack.

Ingredients

Fresh

  • 4 egg yolks
  • 4 spring onions, thinly sliced
  • ยผ cup (60 ml) Mentsuyu or soy sauce

Pantry

  • 1 kg (2 lb 4 oz) frozen udon noodles or 360 g (12ยพ oz) dried udon noodles
  • 12 g (ยผ oz) katsuobushi (dried bonito flakes)

Method

Make sure all the ingredients are prepared and ready before cooking the udon noodles.

Cook the udon noodles according to the packet instructions, then drain.

Quickly divide the hot noodles among four bowls. Top each with an egg yolk and a quarter of the spring onion and katsuobushi, and drizzle with the Mentsuyu or soy sauce. Serve immediately. Stir well with chopsticks as you eat.
