Ingredients

  • 8–10 snow peas for garnish
  • 3 fresh shiitake mushrooms
  • 1 boneless, skinless chicken thigh

Method

  1. Trim the snow peas. Have ready a bowl of ice water. Blanch the peas in boiling water for 1 minute, drain, and immerse in the ice water until chilled through. Drain again, cut into slivers diagonally, and reserve for garnish.
