This is the basic dough recipe for the savoury pastries that grace an authentic Lebanese dinner party, buffet or mezze. Use it in recipes such as the Spinach & Sumac Turnovers and the Minced Lamb & Onion Crescents.


  • 150 g/ oz/1 cup plain/all-purpose flour, plus extra for dusting


  1. Sift the flour, salt and sugar into a mound on a clean work surface and create a well in the middle. Add the oil to the centre of the well and, using your hands, begin to combine with the flour until all is incorporated.
