Mushrooms, thyme, tomatoes and sherry flavour this chicken braise from Varna in Bulgaria. Serve with rice, and a crisp salad at the side.

Ingredients

  • 1.75 kg/4 lb chicken, cut into 8 pieces
  • 2.5 ml/½

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Season the chicken with salt, pepper and thyme. In a large frying pan cook the chicken in the butter and oil, until golden brown. Remove from the frying pan, place in an ovenproof dish and keep hot.
