Pollo con limÓn most probably evolved from the Sephardic cuisine of Andalucia. The sautéed chunks of chicken, with lots of garlic and lemon, make a superb supper or, at a special occasion, served as part of a terrific meze.

Ingredients

  • 2 skinless chicken breast fillets
  • 30 ml/2 tbsp olive oil

Method

  1. Remove the little fillet from the back of each breast. If the breast still looks fatter than a finger, beat it with a rolling pin to make it thinner. Slice all the chicken meat into strips.

  2. Heat the oil in a large frying pan. Stir-fry
