This crisp pastry roll, filled with fruit and jam, is a classic a Shkenazic pastry, which has long been a favourite in Budapest and Vienna. A slice of strudel served with a glass of lemon tea is a pretty irresistible offer.

  • 250 g/9 oz/generous 1 cup butter, softened

Method

  1. To make the pastry, beat the butter until light and fluffy, then add the sour cream, sugar, vanilla extract and salt, and beat together.

  2. Stir the flour into the mixture, then put in a plastic bag; chill overnight or longer.
