The combination of sloe gin and Stilton makes a very English flavour. For a more continental taste, replace the Stilton with Gorgonzola or Dolcelatte.
Warm the olive oil in a small saucepan. Add the onion and cook for a few minutes until softened but without colouring. Add the sloe gin, increase the heat and cook until almost dry. Remove the pan from the heat and leave to cool slightly.
Once the onions are just warm, spoon into a blender with the crème fraîche and crumble in the Stilton. Blend until s
