The combination of sloe gin and Stilton makes a very English flavour. For a more continental taste, replace the Stilton with Gorgonzola or Dolcelatte.

Ingredients

  • olive oil, for cooking
  • 1 small onion, finely chopped
  • 3 tablespoons sloe gin

Method

  • Warm the olive oil in a small saucepan. Add the onion and cook for a few minutes until softened but without colouring. Add the sloe gin, increase the heat and cook until almost dry. Remove the pan from the heat and leave to cool slightly.

  • Once the onions are just warm, spoon into a blender with the crème fraîche and crumble in the Stilton. Blend until s
