Chilli Oil/Chilli Dipping Sauce

Ingredients

  • 2 tablespoons chopped dried red chillies
  • 1 tablespoon whole unroasted Sichuan peppercorns
  • 2 tablespoons whole black beans
  • 150 ml(5 fl oz) groundnut (peanut) oil

Method

Heat a wok over high heat until it is hot. Add the oil and the rest of the ingredients, turn the heat down to low and cook over a low heat for about 10 minutes. Allow to cool undisturbed and then pour into a jar. Let it stand for 2 days, and then strain the oil. It will keep indefinitely.
