Prawns are perfect for a fast but tasty meal. Succulent and irresistible, they are always popular and no wonder. They pair easily with other flavours, as here with coriander and orange. This sounds an unlikely combination, but is absolutely delicious.

  • 450g (1 lb) raw, unpeeled prawns, fresh or frozen

Method

  1. If using frozen prawns, defrost thoroughly. Peel the prawns and discard the shells. Using a small, sharp knife, remove the fine digestive cord. Wash them, drain and pat dry with kitchen paper. In a large bowl, combine the marinade ingredients. Add the prawns, mix well and marinate for 15 Minutes in the refrigerator. Drain, discarding the marinade.
