Stir-Fried Coriander and Orange Prawns

Prawns are perfect for a fast but tasty meal. Succulent and irresistible, they are always popular and no wonder. They pair easily with other flavours, as here with coriander and orange. This sounds an unlikely combination, but is absolutely delicious.


  • 450g (1 lb) raw, unpeeled prawns, fresh or frozen
  • 1 tablespoon groundnut (peanut) oil
  • 1 tablespoon extra-virgin olive oil
  • salt and freshly ground white pepper, to taste
  • 2 tablespoons finely chopped orange zest
  • 2 teaspoons sesame oil
  • 3 tablespoons finely chopped fresh coriander


  • 1 teaspoon sesame oil
  • salt and freshly ground black pepper, to taste


  1. If using frozen prawns, defrost thoroughly. Peel the prawns and discard the shells. Using a small, sharp knife, remove the fine digestive cord. Wash them, drain and pat dry with kitchen paper. In a large bowl, combine the marinade ingredients. Add the prawns, mix well and marinate for 15 Minutes in the refrigerator. Drain, discarding the marinade.
  2. Heat a wok over high heat until it is very hot and then add the groundnut and olive oils. When they are very hot and slightly smoking, add the prawns, together with the salt, pepper and orange zest, and stir-fry for 4 Minutes or until the prawns turn pink.
  3. Stir in the sesame oil, give the mixture a couple of good stirs and continue to stir-fry for another 3 Minutes.
  4. Finally add the coriander and continue to stir-fry for 1 further minute.
  5. Turn onto a warm platter and serve at once.
