Savoury Stir-Fried Beans with Bacon

This is yet another delicious way to cook green beans, but this time as a treat for meat eaters.


  • 175g(6 oz) streaky bacon
  • 450g(1 lb) French or dwarf beans or haricots verts, trimmed
  • 2 tablespoons groundnut (peanut) oil
  • 1 teaspoon sugar
  • 1 tablespoon light soy sauce
  • 3 tablespoons water
  • salt and freshly ground black pepper, to taste
  • 2 teaspoons sesame oil


  1. Cut the bacon into thin shreds. If the beans are more than 7.5cm (3 in) long, slice them. Otherwise, keep them whole.
  2. Heat a wok over high heat until it is hot. Turn the heat down to low, add the bacon and stir-fry until it is brown and crispy. Remove with a slotted spoon and drain well on kitchen paper.
  3. Wipe out the wok with kitchen paper and reheat it over high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the beans and stir-fry for 30 seconds.
  4. Add the sugar, soy sauce and water, and continue to stir-fry for 1 minute.
  5. Add the salt and pepper, cover the wok tightly and simmer for 5 Minutes or until the beans are tender. Check from time to time, adding more water if necessary.
  6. When the beans are fully cooked, uncover the wok and continue to stir-fry until all the liquid has evaporated.
  7. Finally, stir in the sesame oil. Immediately remove the wok from the heat.
  8. Arrange the beans on a warm platter, garnish with the bacon and serve at once.
