Stir-Fried Beans with Chilli Beancurd

A true vegetarian treat that is as tasty as any meat dish. Here fresh green beans, quickly stir-fried in a hot wok, are paired with fermented beancurd. This inexpensive condiment, available from Chinese grocers, is well worth searching for, especially if you are looking for a different vegetarian taste.


  • 450g (1 lb) French or dwarf beans or haricots verts, trimmed
  • 1½ tablespoons groundnut (peanut) oil
  • 3 tablespoons fermented beancurd with chilli
  • 6 tablespoons water
  • 1 teaspoon sugar


  1. If the beans are more than 7.5 cm (3 in) long, slice them. Otherwise, keep them whole.
  2. Heat a wok over high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the beans and fermented beancurd, and stir-fry for 30 seconds.
  3. Add 3 tablespoons of the water and continue to stir-fry for 1 minute.
  4. Add the sugar, cover the wok tightly and simmer for 5 Minutes or until the beans are fully cooked. Check from time to time, adding the additional 3 tablespoons of water if necessary.
  5. When the beans are tender, uncover the wok and stir-fry until all the liquid has evaporated.
  6. Turn onto a warm platter and serve at once.
