This exotic-sounding dessert is really very simple to make. So simple, in fact, that my mother made it often just because it was so easy. The oranges are essential as they add a refreshing touch to this delicate custard, but it will also combine well with other fresh fruits. Serve it with your favourite biscuits.


  • 4 whole eggs
  • 2 egg yolks
  • 8 tablespoons sugar
  • 600 ml(1 pint) whole milk
  • 2 tablespoons lemon zest
  • 1 orange, segmented


  1. In a medium-sized bowl, combine the eggs and yolks with the sugar. Then add the milk and lemon zest, and mix well.
  2. Next set up a steamer or put a rack into a wok and fill it with 5 cm(2 in) water. Bring the water to the boil over a high heat. Pour the milk mixture into a heatproof shallow bowl and then carefully lower it into the steamer or onto the rack. Turn the heat down to low, cover the wok tightly and steam gently for 20 Minutes.
  3. Allow to cool slightly and gently drain off the excess liquid.
  4. Serve while still warm, with the orange segments.
