Dipping sauces are common in all Far Eastern cuisines. Here is a tasty Southeast Asian version with a peanut flavour, commonly used with spring rolls. You may adjust the chilli oil to suit your own palate. This sauce may be made well ahead of time.

Ingredients

  • 1 tablespoon light soy sauce
  • 2 tablespoons Chinese white rice
  • vinegar or cider vine

Method

Combine all the ingredients together in a small bowl, mixing them thoroughly. Leave the dipping sauce to stand for at least 10 minutes before using.
