Dipping sauces are common in all Far Eastern cuisines. Here is a tasty Southeast Asian version with a peanut flavour, commonly used with spring rolls. You may adjust the chilli oil to suit your own palate. This sauce may be made well ahead of time.
1tablespoonlight soy sauce
2tablespoons Chinese white rice
vinegar or cider vinegar
½teaspoon finely chopped garlic
3tablespoonsroasted peanuts, coarsely chopped
Combine all the ingredients together in a small bowl, mixing them thoroughly. Leave the dipping sauce to stand for at least 10 minutes before using.
