Cucumbers are too often taken for granted, their cool unobtrusive virtues having rendered them less interesting than other vegetables and fit only for salad. Stir-fried, however, they take on an unexpected boldness. My uncle used to cook them with little pieces of pork, but I have learned that they are tasty all by themselves with a complementary sauce.
