Sirloin tips are not a traditional cut of meat in Korea. We use them because they’re a popular cut of meat for grilling in America. And being a tougher cut of meat, they benefit from several hours of marinating, which helps to tenderize them and allows the flavors of the marinade to fully penetrate the meat.
