This is best made with day-old rice. I usually also make it with the oldest, stinkiest kimchi sitting in the back of my fridge, bringing it all back to deliciousness by sautéing it with a little sugar and rice wine vinegar, and sometimes the homemade Spam. Yes, you can use canned Spam, or bacon, if you like.
