If you’re short on time and want to put something hearty and delicious on your table, this is the recipe for you. Frozen pie shells are sold in most supermarkets, though I regularly opt for a whole-wheat shell, which is more easily found in health-food stores. I buy a few at a time and store them in the freezer, so I always have them on hand. The asparagus in this recipe can be swapped out for other quick-cooking vegetables, such as chopped spinach or roasted peppers or sliced mushrooms or
