This is an old British recipe for pickling green walnuts before they start to form a hard shell. I used to collect the soft green walnuts from our tree in France in about late July to early August, but that will depend on where you live. I love pickled walnuts and, apart from being delicious when served with cheese and charcuterie, they add a wonderful flavour when crumbled into stews, daubes, casseroles and pie fillings.
