Caesar salad is often thought of as an American dish, but was actually created by Caesar Cardini in Tijuana, Mexico in the 1920s.

Ingredients

Method

  1. Using a balloon whisk or electric beaters, whisk the crushed garlic and egg yolks together in a large glass bowl. Start adding the olive oil, drop-by-drop or in a thin stream, whisking continuously until the dressing starts to thicken.
  2. Add the Worcestershire sauce. Continue whisking in the remaining oil, lemon juice and finally the Parmesan.
