Matzo Meat Cakes

Sephardic cooking is unique among Jewish food in that Mediterranean flavors permeate every dish. No recipe is more important in my family than Matzo Meat Cakes, savory ground beef and onions sandwiched between matzos and baked. It was handed down by my Sephardic great-grandmother Esther, who hailed from the isle of Rhodes, Greece. In her broken English, peppered with Ladino, she taught my Ashkenazi grandmother Rose (her daughter-in-law) how to make this Passover specialty.
