Djadj Mayy Narenge is the original name of this Middle Eastern chicken dish. Djadj means “chicken,” mayy means “water” or “juice” and narenge is a citrus that can be substituted by Seville oranges (bitter oranges) or, as in this case, easier-to-find lemon juice and honey. This is my mother’s chicken recipe, which my sons always request to accompany Iraqi Crispy Saffron Rice (see recipe in “Pasta, Noodles and Grains,”).
