Genepì is a liqueur distilled in the Savoy region of the Alps. One of its main ingredients is juniper berries. Gin is an easier and equally tasty alternative. However, if you come across a bottle of genepì you might be inclined to spend a few dollars extra to experience this deeply aromatic and herbal liquor related to absinthe.

Ingredients

  • 1 tablespoon butter
  • Reserved venison trimmings
  • 1 cup brown chicken or veal stock

Method

  1. In a small, heavy pan, melt the butter over medium-high heat. Add the remaining reserved venison trimmings and sauté until browned and caramelized all over.
