Regina Cake has been a family favorite for special occasions for three generations. It was named in honor of my grandmother’s cook, Regina. The cake itself is a tried and true 1-2-3-4 that can still be found on cake flour boxes, but the filling is unusual. It’s made with matzo meal, and we have always theorized that Regina started using it when she had no nuts in the house. You can also do the reverse and substitute nuts for matzo meal.
