When I first tried this, deep in Soho on a dull Sunday afternoon, I was rendered speechless. It had such intensity, and depth, from relatively few basic ingredients. To re-create it, I used dried shrimps from a Chinese supermarket and they worked just fine. Guajillo chillies are dried chillies with a mild flavour: you can get them from the Cool Chile Co (www.coolchile.co.uk), or try using about 4–6 dried bird’s-eye chillies. Totally different flavour
