Heat and smoke. This is all about the chipotle, the smoked and dried jalapeño chilli.
Heat the oil in a saucepan over a medium heat. Add the onion and garlic and soften for about 10 minutes, then add the chillies and cook for 2 minutes.
Add the tomatoes, vinegar, oregano, sugar and salt and pepper to taste and simmer gently for 20 minutes. Leave to cool before serving.
