Method

  1. In a medium-sized saucepan, heat the glucose syrup, trimoline, cream and passion fruit puree and set on the side.
  2. Place the sugar in a medium-sized pan and add a little water so it resembles wet sand.
  3. Cook the sugar mixture. The water will evaporate and the sugar will caramelize. Let the color of the caramel turn from light amber to m
