This is a great one-pot dinner for when you want a simple meal. Its depth of flavour comes from the ancho chilli powder, but if you can’t find any, use 2 tablespoons of chilli con carne seasoning and omit the ground cumin from the ingredients.

Ingredients

  • 4 tbsp tomato purée
  • 2 tbsp sunflower oil
  • 1 onion

Method

Put the tomato purée and 4 tablespoons water in a small bowl and stir until dissolved, then leave to one side.

Heat 1 tablespoon of the oil in a large frying pan over a high heat. Reduce the heat
