Chickpeas are a tremendous source of protein for vegetarians. You can buy them dried, soak them and then cook them for two hours in water. There is no doubt that home-cooked chickpeas are lovely, but tinned, ready cooked ones are a very good substitute. Simply open the tin, drain and rinse well, then get on with the interesting bit – creating delicious vegetarian dishes!
