Roasted Eggplant Dip

Pindjur is similar to Ajvar (Roasted Red Pepper and Eggplant Dip) in how it is made. These recipes were important in Macedonian homes to maximize the harvest and preserve the ingredients that were in abundance. Even growing up in Toronto, my entire family had lush, abundant gardens in their backyards and we would get together in the fall to preserve what was grown. We always had jars of Pindjur and Ajvar stored in the fridge. Bo
