This salad is the epitome of summer. Growing up in a Macedonian household, we very rarely ate watermelon without feta cheese on the side. Sweet, juicy, salty—it is the perfect combination. Flash-pickling the onions mellows their flavor so they complement the watermelon, feta, and mint instead of competing with them.

Ingredients

  • ¼ red onion, very finely sliced
  • Juice of ½ lemon
  • 1 tablespoon

Method

In a small bowl, mix together the onion, lemon juice, and olive oil. Set aside to marinate for 10 minutes.

Place the watermelon in a large bowl and add the marinated onion. Gently toss to coat.

Transfer to a serving dish and top with the mint and feta cheese.
