My grandparents made this soup for my sister and I whenever they looked after us as children. We were lucky to have them live a few blocks away. I have vivid memories of coming indoors after playing outside on crisp fall afternoons and finding steaming bowls of this soup ready for us.

Method

In a large stockpot, melt the butter over high heat and sear the meat for 5 minutes on each side, or until brown. You may need to work in batches to avoid crowding. Remove the meat from the pot and set aside.

Add the onion to the pot and sauté for 3 to 4 minutes until translucent. Add the carrot and bell pepper, and sauté until tender, 5 to 6 minutes. Stir in the paprika, oregano, 1 tab
