Rice has an important role in Macedonian cuisine. Its mild character complements many of the salads and proteins. I’m a purist when it comes to rice. My grandfather taught me that first toasting the rice in a little butter and using boiling water instead of cold will keep the rice from sticking together, and it will cook perfectly every time.
