This is a popular dish in restaurants in Macedonia. The Macedonian style of eating usually has lots of small plates and side dishes around a centerpiece of meat or fish. Fried eggplants are an important part of that tapestry.

Ingredients

  • 1 cup (125 g) all-purpose flour

Method

Pour the flour into a shallow dish with 1½ teaspoons of kosher salt and 1 teaspoon of black pepper and stir to combine. In a second shallow dish, combine the breadcrumbs with 1½ teaspoons of kosher salt and 1 teaspoon of black pepper. Place the whisked eggs in a third shallow dish.

In a small bowl, toss together the tomato, mint, and lemon zest. Set aside.
