There are several different squash varieties that grow in Macedonia, but acorn squash is among the most common. Growing up in Toronto, we were fortunate to have access to incredible squash. Acorn squash is one of my favorites. In Macedonia, squash is often prepared simply, roasted like this, or boiled and puréed as a filling for savory pastries. We only eat this in the fall when squash is in season and at its most flavorful.
