Here is a simple cabbage dish that you could serve just as easily with grilled pork chops as with an Indian meal.


  • 500 g/1 lb 2 oz green English cabbage

  1. Core the cabbage and cut it into very fine, long shreds. Put the peas in a sieve and hold them under warm running water until they separate.
  2. Heat the oil in a wide pot over a medium-high flame. When hot, put in the cumin seeds and bay leaves. As soon as the bay leaves begin to take on colour – this just takes a few seconds – put in the cabbage and peas and stir
