THE RECIPE I don’t look forward to any breakfast pastry more than cinnamon rolls. Even though I can’t imagine a less healthy breakfast dish—unless starting the day with a sugar rush is your definition of healthy— I still find myself clamoring for one of these soft, icing-covered confections in the morning.

  1. Line an 8-by-12-inch baking sheet or pan with parchment paper. Combine granulated and brown sugars, cinnamon, and nutmeg in a small bowl. On a lightly floured surface roll dough into an 8-by-12-inch rectangle. Position it with the long side nearest you. Brush with 2 ounces of the butter (it may pool in areas; that’s fine) and sprinkle cinnamon mixture over top.
