Brioche Dough is a naturally leavened yeast dough, similar to a bread dough, that is enriched with eggs, butter, and sugar. It is used to create a wide range of light, airy, and breadlike pastries, including cinnamon rolls, doughnuts, brioche à tête, and even bread. The dough ratio is 10 FLOUR : 2 FAT : 3 MILK : 1 SUGAR : 3½ EGG.
