THE RECIPE Doughnuts are another wonderful application for brioche dough. Although I’m sometimes tempted to simply deep-fry a peanut butter and jelly sandwich, this PB&J-filled doughnut made with brioche dough is probably a better idea.

  1. Line a baking sheet with parchment paper. Roll dough into a 6-by-8-inch rectangle. Cut out 6 circles with a 2½-inch round cookie cutter. Place circles on prepared sheet spaced 2 inches apart.
