This is a good family dish, equally popular with adults and children. It is made in a Swiss roll fashion, with mashed potato encasing a pork mixture, full of flavour and baked until crisp and golden.

Ingredients

  • 680 g potatoes, peeled
  • 80 g butter, plus extra for baking

Method

Boil or steam the potatoes until soft. Put in a mixing bowl, add the butter and some seasoning and mash until smooth. Purée the garlic with a little salt using a pestle and mortar. Stir the garlic purée and egg into the potato and set aside to cool.

Preheat the oven to 180°C/Gas mark 4
