We use this mayonnaise base to build our wasabi mayonnaise, as well as many others.


  • 2 egg yolks
  • ½ teaspoon English mustard
  • 40 ml (1¼<


Whisk the egg yolks, mustard and lemon juice together. Slowly add the oil in a steady stream, while whisking, to emulsify.
