This signature cocktail has been on the menu since opening. When I have friends and guests in, it is one I always recommend and a real crowd-pleaser.

Ingredients

  • squeeze of lime juice
  • squeeze of lemon juice
  • 30 ml (1 fl oz) umeshu (plum wine

Method

Place all of the ingredients in a Boston shaker, and shake well to allow the egg white to foam.

Pour over ice and serve.
