Like Ricky Martin in leather shorts, this sauce has sass, verve and rhythm. In Spain they serve it with meat, fish, grilled veg and especially with grilled calçots, a larger-than-life spring onion. It is also traditionally made with almonds if you have an almond tree, or bread, if you don’t. Luckily, we can go to the supermarket, so we’ve done it with both.
