This is very different to the runnier, more classic mayo-based slaw over to the right.

Use the freshest, most delicious, seasonal veg for this and you’ll be rolling in the hay. If it is summer, fresh radishes, courgette, hispi cabbage and sweetcorn could all be put to good use; if it’s winter, then red cabbage, fennel, apples, brussels sprouts and kale are some of the finest coleslaw makers there are.
