Oh my lord this is good. All the joys of regular coleslaw, plus some delicious extras. This is much wetter and sloppier than the other coleslaw recipe we’ve given you. Try both and choose a favourite.

Ingredients

  • ½ white cabbage, cut in half, core removed and sliced as thinly as possible
  • 3 carrots, peeled and coarsely grated
  • 1 onion, g

Method

Mix all the veg, (including the parsley stalks but not the leaves and pomegranate seeds) together in a large bowl, sprinkle with the salt and toss about. You want it all to start to soften a bit and break down. While all that gets to know itself, mix the dressing ingredients in a bowl.
